| The story of our product line began with our Viridens extra virgin olive oil. This luminous oil comes from Alberto's native Umbria, along the costiera d'argento (silver coast) between Assisi and Spello, an area consecrated by the Pope in the 13th century for olive production. The oil is produced by the Pandolfi-Elmi family in the stoney hills of Cancellara. |

The Fiore di Sale, the precious flower of salt, is formed on the surface of the salina when very particular northern winds blow in conjunction with the intense Sicilian sun.The delicate crystals are swept with flat, wooden shovels into straw baskets on the edges of the salina to dry naturally. The Fino and Grosso salts are hand-harvested between May and August when the seawater has evaporated, and gathered in a series of crystal "hills" to dry in the sunlight, before they are crushed to size. Try a whole fish baked under this moist Fiore or add the Fino to extra virgin olive oil with ground pepper and chili flakes for a vegetable pinzimonio. Use the Grosso for perfect pasta water or slow-cooking sauces and stews. Fiore di Sale, 250 g (8.8 oz); Sale Fino, 300 g (10.5 oz); and Grosso, 200 g (7 oz).

Sante built his azienda and vineyard with the same objective: to revive the antique cultural tradition and agrarian activity, the "Lungo Progetto Balsamico!" the art of aging vinegar over time. |

This artisan vinegar is made from Trebbiano and Lambrusco Grasparossa grapes grown on gracefully terraced vineyards without the use of pesticides or herbicides.The grape must is filtered and cooked, then aged in barrels of oak, cherry, ash, mulberry, juniper, and walnut, each wood lending its unique flavor to the aging aceto.
